Alright, so this week it seems as though I could have done more to contribute to the health of those around me. Well GUESS WHAT? It’s even worse than it seems.
That’s right. This Saturday I spent the entire day… making desserts to fatten up my friends. (See below.) To be fair, most of my friends are in better shape than I am. That’s not just because I’m lazy. They just generally eat well and exercise a lot. Which makes me feel like a loser. So I feed them desserts! I know it sounds counterintuitive, but everyone wins. Anyway, on to the foods I ate for dinner!
I know, chili on a Sunday again. It was so good. Once again, made by my friend Eric, and featuring a counter stocked with vegetables prepared by… my other friend Eric!
Since you’re no doubt wondering: no, the Jim Beam was not emptied during the preparation of vegetables or chili. It was just there. Also, the chili did, of course, have venison sausage in it. For those of you not from Michigan, deer are BIG. And they provide a lot of delicious meat. Also, I actually contributed to Chili Day this week! I may put this recipe up later in the week, because ghost-pepper-queso-fresco cornbread turns out (not surprisingly) to be delicious.
More freezer food. This keeping-track-of-meals thing is making me feel lazy. But hey! At least we get our veggies. This if the Bertolli Asparagus and Penne with about half a cup of lima beans and half of a bell pepper added in. Mmmm.
Notes: Sometimes you just need to eat, man. And that’s what I needed. So I did.
Tuesday: Stir Fry!
I finally bought rice noodles to try my hand at stir fry with, well, rice noodles. Also, as you can probably see, onion, a couple chili peppers, green beans, water chestnuts, bell peppers, broccoli, and STEAK! Not pictured, also consumed: I caved. This wasn’t as filling as my stomach was empty after 8 hours in class/working on science with only a granola bar to hold me over. These are the (poor) reasons I broke down and had a mint-chocolate-chip ice-cream sandwich for dessert. Hopefully it erased my stir-fry breath!
Notes: I listed the ingredients in the order that I added them. Broccoli and steak went in last other than the noodles. This is the only secret to stir fry: add the things first that need to cook the longest. You’re welcome.
More rushed, pre-Ultimate dinner. Fortunately I had leftover potato wedges from a few days ago…. and steak! Not pictured: Sodaaaa waterrrrr…. mmmmm.
Notes: So I think the key is to rub some spices on the steak to marinate it for a while before cooking, then cook over a really hot burner to get some nice flavor on the outside and happy pinkness in the middle!
Thursday: Still lazy
Today I woke up feeling great, and then somehow in the middle of biostats started feeling really nauseated and had to go home. I know what you’re thinking, and no, it wasn’t brought on by biostats. Also, you probably don’t know me, but I NEVER skip class. I mean, never. So I felt bad.
Anyway, dinnertime came around, and I was going to just make mashed potatoes and try to eat some, but the boyfriend got grumpy at the possibility of only eating mashed potatoes for dinner. Hence, freezer pizza plus. This is the CPK White frozen pizza, topped with five diced mini bell peppers, a quarter of a red onion, and a little extra cheese. Looks pretty good, huh? Peppers make everything look prettier. Not pictured: I only at 1/6 of this pizza because the stomach was not very pleased with me. However, I was feeling a little better Friday afternoon so I got to eat the other two pieces for lunch!
Friday: Potato… thing.
Tonight I was feeling a little better than last night, but not better enough that I wanted to get fancy with it. So I threw a bunch of stuff in a pan, topped it with cheese, and threw it in the oven for 45 minutes. Turned out pretty solid, if I do say so myself!
Ingredients, from bottom to top: potato slices, onions, black beans, bell peppers, a couple scrambled eggs, tomato soup that I added a bunch of spices to, and cheddar cheese. Vegetarian, whaddayaknow?
Notes: I am so much more kitchen-productive at the beginnings of weeks than the ends of weeks.
Saturday: Baking, not eating.
Not pictured: There is no picture here because I didn’t really eat dinner tonight. I spent the entire afternoon baking, and by the time the Michigan game started at 9 (no, I DON’T want to talk about it), I hadn’t eaten a darn thing. I did, however, have a couple pieces of pizza from the Great Lakes, Better Food home kitchen. Those were delicious, though unphotographed because I was too busy watching us lose a basketball game. I guess this falls under the “mooch” category.
Notes: Homemade pizza crust is way better than the other kinds.
Wow, week 5 was a long week. Not foodwise. Foodwise it was a pretty solid week (see baking things all day Saturday). Work- and schoolwise, however…. long, long week. Let’s all cross our fingers that my paper gets accepted with no revisions and I can just do experiments and study for a few weeks, eh?
